This is a recipe from my friend Marjorie who is blind and who is a three time cancer survivor...a real inspiration to all who know her! You won't regret trying it because it's just delicious and is a great little appetizer that be made ahead and frozen if you want. Mary Vicker's Nibblers Ingredients: 3 cups old cheddar cheese 1 85 gm. pkg. real bacon bits 1 small onion, grated or chopped small 1 cup lite miracle whip 1/2 cup sliced almonds 1 baguette, sliced in to thin rounds Method: mix all together, place heaping spoonful onto baguette rounds, spread out. Place onto cookie sheet into 350 degree preheated oven for 9-11 minutes. Do not overcook as bread will dry out and cheese will burn. Serve warm...delicious! Freezer Method: Make as above and place onto cookie sheet. Freeze for about 1 hour then place each round into a freezer bag. Will need to be thawed for about 10 minutes before cooking.

Apricot or Peach Pie, submitted by Heather Carr,Parish of Stanley NB
"Apricot or Peach Pie", this is a family favorite that our family still uses for Easter Dinner. My Godmother who is a great inspiration of spiritual strength to me gave me this recipe, it is one of many that I got from her over the years. I always make two now if they are all coming for dinner as my family always wants seconds. 1--9" unbaked pie shell 4 Beaten Eggs 1-16 oz Can of Fruit Pureed 1 1/2 Cups of Milk 1/3 Cup sugar 1 Tsp Vanilla 1 Tsp of Lemon Juice 1/4 Tsp of Salt 1/4 Tsp of ginger 1/4 Tsp of Cinnamon Preheat oven to 450 degrees. Brush inside of pie shell with beaten egg. Bake 5 minutes. Remove from oven and set aside. Lower oven to 350 degrees. In large bowl beat fruit and eggs till smooth. Add remaining ingreients mixing well with mixer on medium. Spoon into pie shell. Bake 40 --50 minutes or until knife comes out of centre clean. Serve warm with ice-cream or whipping cream. Store remainder in fridge to avoid spoiling.
